A Butcher is responsible for cutting, trimming, and preparing meat products for sale in retail or wholesale markets. They are skilled in handling various types of meat, including beef, pork, poultry, and fish, and have the knowledge to process these into cuts for consumption. Butchers must ensure that the meat is prepared in accordance with food safety standards and customer preferences. They also handle the maintenance of their tools, manage inventory, and interact with customers to meet specific orders or requirements.

Responsibilities:

  • Cut, trim, debone, and grind meat products, including beef, pork, poultry, and fish.
  • Prepare meat cuts and portion them according to customer specifications or market standards.
  • Package and display meat products for retail sale, ensuring proper labeling and pricing.
  • Sharpen and maintain knives, saws, and other cutting tools to ensure precision and safety.
  • Monitor inventory levels of meat products and order supplies when necessary.
  • Ensure proper storage of meat products in temperature-controlled environments to prevent spoilage.
  • Maintain clean and sanitary work areas, following all food safety and hygiene guidelines.
  • Advise customers on various cuts of meat, preparation methods, and cooking techniques.
  • Manage customer orders, including custom cuts and bulk purchases.
  • Dispose of waste materials properly and ensure compliance with local health regulations.

Requirements:

  • Previous experience as a butcher or in meat processing is preferred, though on-the-job training may be available.
  • Strong knowledge of different cuts of meat, poultry, and fish, as well as proper handling and preparation techniques.
  • Physical stamina to stand for long periods, lift heavy cuts of meat, and perform repetitive motions.
  • Ability to work with sharp knives and other cutting tools safely and efficiently.
  • Familiarity with food safety and sanitation regulations, particularly for handling raw meat products.
  • Good customer service skills and the ability to handle customer requests and orders professionally.
  • Attention to detail when cutting and preparing meat to ensure quality and consistency.
  • Basic math skills for weighing, pricing, and portioning meat products.
  • Ability to work early mornings, weekends, or holidays, as needed by the business.
